Norwegian Flatbread

Once, my little sister got out her doll’s rolling pin to help Grandma roll this dough.

Ingredients

2 cups buttermilk
1 teaspoon baking soda
1 cup butter-flavored shortening
3/4 cup granulated sugar
1 teaspoon salt
3 cups graham flour
2 to 2 1/4 cups all-purpose flour

Directions

Heat buttermilk in a small saucepan over medium heat just until warm.

Combine warm buttermilk and baking soda in a large bowl and stir to dissolve baking soda.

Add shortening, granulated sugar and salt to buttermilk mixture and mix well. Stir in graham flour and enough all-purpose flour to form a soft dough. Chill, covered, for 2 hours or longer.

Preheat the oven to 400ºF.

Divide dough into 12 equal portions. Roll each portion into a 9-inch circle on a floured surface; dough will be very thin. Arrange on baking sheets. Prick with a fork.

Bake until golden, about 10 minutes. Remove from baking sheets and cool on wire racks. Store leftovers in an airtight container.

Grandma's Secret Trick

To easily roll dough into a circle, Grandma said she thought of the piece of dough as a clock face. She rolled away from herself at 12 o'clock, then at 2 o'clock, then at 10 o'clock. Then she rolled across the dough from 3 o'clock to 9 o'clock. She gave the dough a half turn and repeated the rolling.
