Roasted Pepper & Garlic Pizza

Ingredients
Serves 4
- 1 (13.8-ounce) tube refrigerated pizza crust
- 1 tablespoon roasted garlic
- 2 large tomaotes, thinly sliced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup shredded Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup roasted red bell pepper, sliced thin
- 2 green onions, sliced
Directions

Preheat oven to 425˚F. Spray a baking sheet with nonstick cooking spray.

Unroll the pizza crust onto the baking sheet. Spread the roasted garlic in a thin layer over the crust.

Layer the tomatoes over the garlic. Sprinkle with the salt, black pepper and red pepper flakes, if desired.

Sprinkle the Parmesan and mozzarella over the tomatoes. Top with the sliced red bell peppers.

Bake 14 minutes, or until crust is brown around the edges and the cheese is bubbling. Cut into squares and garnish with the green onion.

Grandma's Secret Tip
To make quick roasted garlic, slice the top off a large head of garlic to expose the cloves. Place in a microwave-safe bowl. Add salt & pepper, 3 tbsp. olive oil & 2 tbsp. water. Cover with plastic. Microwave on MEDIUM 5 minutes. Let stand 5 minutes. Squeeze garlic from cloves & mash in the oil.

Variation
To make kid-friendly pizzas, omit pepper flakes & use split English muffins as the crust. Bake at 425˚F for 10 minutes.

Freeze slices of pizza in zip-top bags. Unwrap & bake frozen slices 10 minutes at 425˚F.
