Sausage & Ricotta Calzones

Ingredients

Serves 4 

  • 1 1/2 teaspoons Italian seasoning
  • 1 cup ricotta cheese
  • 1/2 teaspoon garlic powder
  • 2 (10-ounce) cans refrigerated pizza dough
  • 2 cups marinara or pizza sauce
  • 2 cups shredded mozzarella cheese
  • 3 1/2 ounces cooked Italian sausage links, cut into 1/4-inch slices
  • 3 tablespoons grated Parmesan cheese
Directions

    Preheat oven to 375°F. Line a baking sheet with aluminum foil. Grease lightly.

    Combine the ricotta, Parmesan, Italian seasoning and garlic powder in a small bowl and mix well. Stir in the sausage and the mozzarella.

    Remove the dough from each can. Roll into two12- x 10-inch rectangles. Cut each rectangle in half lengthwise to make 4 calzones. Spoon 1/2 cup of the sausage mixture onto one end of each rectangle.

    Fold the dough in half to enclose the filling. Press the edges with a fork to seal. Arrange the calzones on the prepared baking sheet. Pierce the dough all over with a fork.

    Bake the calzones until golden brown, about 22 minutes. Remove from the oven and let stand 5 minutes. Serve with heated marinara or pizza sauce.

Allowing the calzones to cool for a few minutes lets the filling firm up, making them easier to cut so you won't lose any delicious filling.

Make calzones & bake for 15 minutes at 375°F. Cool completely & freeze up to 3 months. Bake frozen on a greased baking sheet for 30–35 minutes.

Substitute 1 cup chopped cooked chicken for the sausage & add 1/2 cup chopped, thawed frozen spinach to the filling. Use reduced-fat cheeses & whole-wheat pizza dough.
