Sweet Potato Biscuits

Ingredients

Serves 16 

  • 2 1/2 cups biscuit mix
  • 1 cup mashed cooked sweet potato
  • 1 tablespoon baking powder
  • 5 1/3 tablespoons butter, softened
Directions

    Preheat the oven to 400ºF.

    Combine biscuit mix, sweet potato, milk and butter in a large bowl and mix well.

    Spoon the dough onto a floured surface. Roll the dough in the flour to coat. Shape into a ball.

    Knead the dough 3 or 4 times. Roll into a 1/2-inch-thick circle. Cut with a 2-inch biscuit cutter dipped in flour.

    Arrange biscuits with sides touching on a baking sheet.

    Bake the biscuits until golden brown, about 10 to 12 minutes. Serve immediately.

    Variation: Substitute skim milk for the whole milk. Add 1 teaspoon cinnamon.
