Traditional Flour Tortillas

1 1/2 to 2 minutes“These are so good hot from the griddle that Grandma used to make a meal of just tortillas and some cheese.”
Ingredients
Serves 12
- 3 cups all-purpose flour
- 5 tablespoons vegetable shortening
- 1 teaspoon salt
- 1 cup warm water
Directions

Preheat griddle to medium-high.

Combine flour, shortening and salt in a food processor. Process until the mixture is crumbly.

Add warm water gradually to food processor, processing continually. Process until the mixture is smooth.

Divide the dough into 12 balls. Roll each ball into an 8-inch circle.

Cook tortillas a few at a time on hot griddle until dry, about 1 1/2 to 2 minutes.

Making Tortillas By Hand
Making tortillas by hand is authentic & easy. Mix the shortening into the flour with your hands until the mixture resembles coarse meal. Dissolve the salt in 1 cup of water; add the salt water to the flour mixture & mix with your hands to combine. Knead the dough 2-3 minutes until smooth; cover & let rest for 20 minutes. Continue as directed.

Grandma's Secret Trick
To make a quesadilla, Grandma topped a cooked tortilla with 2 tablespoons shredded Monterey Jack cheese, then folded it in half to enclose the cheese. She placed the folded tortilla on the hot griddle or in a cast-iron skillet and cooked until the cheese was melted, turning once. Then she cut it into 3 wedges.
