Wheat Griddle Biscuits

Ingredients

  • 3 cups all-purpose flour
  • 2 cups whole-wheat flour
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 3/4 cup vegetable shortening
  • 2 cups buttermilk
  • 1 teaspoon baking soda

Directions

  • 1
    Combine all-purpose flour, whole-wheat flour, granulated sugar, baking powder and salt in a large bowl and mix well.
  • 2
    Add shortening to flour mixture and cut in with a pastry blender until mixture is crumbly.

    Combine buttermilk and baking soda in a small bowl and mix well. Add to shortening mixture and stir until well mixed.

    Roll dough 1/4 inch thick on a floured surface. Cut dough with a 11/2- to 13/4-inch biscuit cutter.

    Preheat nonstick griddle to 325ºF.

    Cook biscuits on hot griddle until lightly browned on both sides, turning once, about 31/2 to 4 minutes. Serve with butter and jam.

Grandma's Secret Trick

When she didn't have buttermilk on hand for this recipe, Grandma mixed 1 cup plain yogurt and 1 cup milk to make a good substitute. She let the mixture stand for at least 5 minutes before proceeding. It worked just as well as buttermilk.
