Italian-style Chicken

A balsamic vinaigrette, Italian parsley, Dijon-style mustard and plenty of garlic give these chicken drumsticks their “wow” factor.

Ingredients

Serves 6 

  • 1 cup coarsely chopped Italian parsley
  • 1/2 cup balsamic vinaigrette
  • 1/4 cup Dijon-style mustard
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp. black pepper
  • 2 cloves garlic, chopped
  • 3 lb. chicken drumsticks
  • 1/4 tsp. salt
Directions

    Preheat oven to 425°F. Line a rimmed baking sheet with foil. Place the parsley, vinaigrette, mustard, Parmesan, pepper and garlic in a blender container. Cover and blend until almost smooth.

    Sprinkle the chicken with the salt. Rub the parsley mixture onto the chicken.

    Place the coated chicken on the prepared baking sheet.

    Bake until cooked through and the juices run clear when pierced with a knife, 20–25 minutes. Serve.
