Sweet Almond Chicken

Ingredients
Serves 6
- 31/2 lb. whole chicken legs
- 2 tsp. salt
- 1 tsp. black pepper
- 1/2 cup apricot preserves
- 1 tbsp. lemon juice
- 1 tbsp. soy sauce
- 2 tsp. grated gingerroot or 1/2 tsp. ground ginger
- 3–4 tbsp. sliced almonds
Directions

Preheat oven to 350°F. Generously spray a shallow baking pan with nonstick cooking spray. Cut the chicken into thighs and drumsticks. Combine the salt and pepper in a small bowl. Sprinkle on both sides of the chicken.

Combine the preserves, lemon juice, soy sauce and gingerroot in a small bowl. Mix well.

Place the chicken in the prepared pan. Brush the apricot glaze on the chicken pieces. Bake for 15 minutes. Remove the pan from oven. Brush the glaze on top of the chicken again. Bake for15 minutes longer.

Remove the pan from oven. Brush the chicken with the remaining glaze. Sprinkle with the almonds, pressing to adhere. Bake until the chicken is cooked through and the juices run clear when pierced with a knife, 15–20 minutes more. Serve.
