Ingredients

Serves 8 

  • 6 cloves garlic
  • 3 lb. beef bottom round roast
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 2 tbsp. olive oil
  • 2 large onions, thinly sliced
  • 1 package (0.6–1 oz.) au jus gravy mix
Directions

    Preheat oven to 350°F. Peel the garlic and cut into thin slices. Cut slits all over the roast with the tip of a knife. Press the garlic slices into the slits. Sprinkle the roast with the salt and pepper.

    Heat the oil in a largenonstick skillet over medium-high heat.Add the roast. Cookuntil browned on allsides, 8–10 minutes.

    Transfer the roast to an ungreased small roasting pan or 13- x 9-inchbaking pan. Add the onions to the skillet. Toss to coat with the oil. Transfer the onions to the roastingpan with the beef. Bakeuntil medium doneness,about 1 hour 20 minutes. Transfer the roast and onions to a serving platter.

    Combine the gravy mix and 1 cup water in the roasting pan. Whisk until blended. Cook over medium heat until thickened, about 1 minute. Slice the beef into thin slices. Serve with the gravy.
