Spaghetti, eggs and bacon can be a sublime mixture, especially in this easy baked version of the classic Italian carbonara.

Spaghetti, eggs and bacon can be a sublime mixture, especially in this easy baked version of the classic Italian carbonara.

Ingredients

Serves 4 

  • 8 oz. spaghetti
  • 2 tbsp. (1/4 stick) butter
  • 4 large eggs, beaten
  • 3/4 cup shredded Parmesan cheese, divided
  • 1/2 tsp. coarse salt
  • 1/4 tsp. black pepper
  • 8 strips bacon, cooked and crumbled
  • 1/4 cup chopped green onions (about4 medium), divided
Directions

    Preheat oven to 350°F. Lightly spray an 8-inch or 9-inch square baking dish with nonstick cooking spray. Cook the spaghetti according to the package directions. Drain and toss with the butter. Keep warm.

    Combine the eggs, 1/2 cup Parmesan, the salt and pepper in a large bowl.Add the warm spaghetti.Toss to mix.

    Stir the bacon and 2 tbsp. green onions into the spaghetti mixture.

    Pour the spaghetti mixture into the prepared baking dish. Sprinkle with the remaining cheese andgreen onions. Bakeuntil heated throughand the eggs are cooked,25–30 minutes. Serve.
