Brown And Wild Rice Medley

Ingredients
Serves 6
- 2 medium carrots
- 4 oz. fresh mushrooms
- 8 green onions
- 1/4 cup (1/2 stick) butter
- 1 cup brown rice
- 1/2 cup wild rice
- 4 cups chicken broth
- 1/2 tsp. salt
- 1/4 tsp. dried thyme
- 1 tbsp. chopped fresh parsley
Directions

Preheat oven to 350°F. Chop the carrots, mushrooms and onions.

Melt the butter in a large saucepan. Add the carrots, mushrooms and onions. Cook, stirring occasionally, until softened, about 3 minutes. Add the brown rice and wild rice to the pot. Stir until coated with the butter.

Add the broth, salt and thyme. Bring to a boil.

Remove from heat and transfer to a baking dish with a cover.

Bake, covered, until the rice is cooked through, about 45 minutes. Sprinkle with the parsley before serving.
