Carrots, mushrooms and onions team upwith both brown and wild rice for a fresh,nutty-tasting rice medley.

Ingredients

Serves 6 

  • 2 medium carrots
  • 4 oz. fresh mushrooms
  • 8 green onions
  • 1/4 cup (1/2 stick) butter
  • 1 cup brown rice
  • 1/2 cup wild rice
  • 4 cups chicken broth
  • 1/2 tsp. salt
  • 1/4 tsp. dried thyme
  • 1 tbsp. chopped fresh parsley
Directions

    Preheat oven to 350°F. Chop the carrots, mushrooms and onions.

    Melt the butter in a large saucepan. Add the carrots, mushrooms and onions. Cook, stirring occasionally, until softened, about 3 minutes. Add the brown rice and wild rice to the pot. Stir until coated with the butter.

    Add the broth, salt and thyme. Bring to a boil.

    Remove from heat and transfer to a baking dish with a cover.

    Bake, covered, until the rice is cooked through, about 45 minutes. Sprinkle with the parsley before serving.

Serve with marinated grilled chicken breasts and green beans. Lemon sherbet and shortbread pair up nicely for dessert.

• Golden raisins, chopped walnuts or sweetened dried cranberries are all good stir-ins for wild rice dishes. Just stir in1/2 cup of any one of those in Step 3.
