Jazz up a spicy meat sauce with tubes of penne pasta and a topping of crunchy tortilla chipswith plenty of melted cheese.

Ingredients

Serves 4 

  • 1 large onion
  • 2 cloves garlic
  • 1 tbsp. vegetable oil
  • 1 lb. ground beef
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 2 tbsp. tomato paste
  • 1 tsp. chili powder
  • 11/2 cups beef broth
  • 1 can (141/2 oz.) diced tomatoes
  • 6 oz. penne or other tube-shaped pasta
  • 11/2 cups crushed tortilla chips
  • 3/4 cup shredded Cheddar cheese
Directions

    Chop the onion and crush the garlic. Heat the oil in a large, deep saucepan. Add the onion. Cook over medium-low heat for 5 minutes. Increase heat and add the garlic and beef. Cook, stirring, until the beef is browned, about 5 minutes. Season with the salt and pepper.

    Stir in the tomato paste and chili powder. Cook for 5 minutes. Stir in the broth and tomatoes. Simmer, uncovered, until the liquid has evaporated, about 30 minutes.

    Meanwhile, place thepasta in a saucepan oflightly salted water. Cook the pasta according to the package directions. Drain. Stir the pasta into the meat mixture. Transfer the mixture to a large ovenproof dish.

    Preheat broiler to high. Sprinkle the crushed tortilla chips and Cheddar over the meat and pasta mixture. Broil until the cheese is melted and chips begin to brown, about 3 minutes. Serve hot.

• Reserve some of the cooking water when draining the pasta, just in case the meat sauce needs more liquid when adding the pasta in Step 3. Also, try a mixture of pasta shapes such as twists and shells.
