Warming Spaghetti Bake

Ingredients
Serves 4
- 12 oz. spaghetti
- 1 oz. butter
- 1 onion, finely chopped
- 8 slices bacon, chopped
- 4 tbsp. all-purpose flour
- 1/2 cup milk
- 1 tbsp. Dijon-style mustard
- 51/2 oz. Parmesan cheese, grated
- 1/4 tsp. salt
- 1/2 tsp. black pepper

Preheat oven to 400°F. Cook the spaghetti in a large saucepan of salted water according to the package instructions. Reserve 1/4 cup of the pasta water. Drain the spaghetti in a colander and keep warm.

In a large saucepan, melt the butter over medium-high heat, add the onion and fry for 3 minutes. Add the chopped bacon and fry for6 minutes longer.

Stir in the flour and cook for 1 minute. Gradually stir in the milk, then the mustard. Bring to a boil and simmer, stirring, for 1 minute. Add the reserved pasta water, 1 tbsp. at a time, if the sauce gets too thick. Season with the salt and pepper.

Drain the spaghetti and combine with the sauce. Place in a large ovenproof dish. Sprinkle the Parmesan over the spaghetti mixture. Bake until golden and bubbly, about 20 minutes. Serve immediately.
