Broccoli-Bean Pasta Toss

Ingredients
Serves 4
- 8 ounces ziti pasta
- 1/4 cup olive oil, divided
- 2 cloves garlic, minced
- 1 small onion, chopped
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1 bunch broccoli, chopped
- 1 cup Great Northern beans, drained
- 1 1/2 cups chopped tomatoes
- 1/4 cup chicken broth
- 1/4 cup fresh bread crumbs
- 1/4 cup shredded Parmesan cheese
Directions

Cook pasta according to package directions. Drain. Add 1/2 tablespoon olive oil. Toss well. Mound pasta in a serving bowl.

Heat 2 tablespoons oil in a large skillet. Add garlic, onion, pepper flakes and salt. Cook, stirring, until onion is tender. Increase heat to medium-high. Add broccoli.

Cook, stirring, until broccoli is crisp-tender, about 5 minutes. Add beans, tomatoes and chicken broth to skillet. Cook, stirring occasionally, until some liquid evaporates, about 5 minutes.

Heat remaining olive oil in a small skillet. Add bread crumbs. Cook, stirring constantly, until crumbs are crisp and browned. Pour sauce over pasta in bowl. Top with bread crumbs and cheese.
