Ham and Vegetable Pappardelle

15 minutes“Pappardelle are wide, ribbon-like noodles. If your grocer does not carry this pasta, or if you would prefer a less expensive substitute, use broken pieces of lasagna noodles instead.”
Ingredients
Serves 4
- 8 ounces pappardelle noodles
- 2 teaspoons vegetable oil
- 2 tablespoons butter
- 1 cup broccoli florets
- 1 small onion, chopped
- 1 cup sliced mushrooms
- 1 cup cherry tomato halves
- 1 cup chopped ham
- 2/3 cup shredded Parmesan cheese
Directions

Cook pasta according to package directions; drain. Add oil to pasta; stir to coat.

Meanwhile, heat butter in a large skillet. Add broccoli, onion and mushrooms. Cook over medium heat, stirring occasionally, until tender, about 10 minutes.

Add pasta, cherry tomatoes and ham to skillet. Cook until heated through, about 5 minutes.

Divide pasta among individual plates. Sprinkle with Parmesan.
