Nutty Blue Cheese Gnocchi

Homemade gnocchi are thrifty. Mix the pulp from 2 pounds cooked potatoes, 11/3 cups flour and 1 teaspoon salt. Roll dough into ropes. Cut into 3/4-inch pieces. Boil until gnocchi float, about 2 minutes.

Ingredients

Serves 4 

  • 4 tablespoons butter
  • 4 fresh sage leaves
  • 1/2 cup walnut pieces
  • 16 ounces fresh or frozen cheese gnocchi
  • 1/4 cup shredded Parmesan cheese
  • 1/4 cup crumbled blue cheese
  • 1/4 cup sliced green onions (about 3 green onions)

    Melt butter in a skillet over low heat. Add sage. Cook until fragrant, about 1 minute. Remove skillet from heat; set aside.

    Toast walnuts in a small skillet over medium-high heat until golden, about 5 minutes.

    Cook gnocchi in a large pot according to package directions. Drain. Return gnocchi to pot.

    Add butter mixture, walnuts, Parmesan, blue cheese and green onions to pot; stir well. Spoon gnocchi into individual bowls.
