Russian Poppy Seed Noodles

Ricotta cheese gives these noodles a rib-sticking quality. However, to cut the cost, use small-curd cottage cheese instead. Choose low-fat cottage cheese and save calories at the same time.

Ingredients

Serves 6 

  • 1 (12-ounce) package egg noodles
  • 1 cup ricotta cheese
  • 1 cup plain yogurt
  • 4 tablespoons butter or margarine, melted
  • 1 egg, lightly beaten
  • 1 tablespoon poppy seeds
  • 1/8 teaspoon ground nutmeg
  • 1/2 teaspoon celery salt
Directions

    Preheat oven to 325°F. Grease a medium baking dish. Cook noodles according to package directions; drain and rinse.

    Combine ricotta, yogurt, butter, egg, poppy seeds, nutmeg and celery salt in a large bowl; mix well.

    Add noodles to bowl; stir gently.

    Spoon noodle mixture into prepared baking dish. Bake until top is golden, about 30 minutes.
