Stuffed Pasta Squares

10 minutesA variety of leftover cooked meat—pork chops, sausage, bacon, chicken, or even hamburger patties—works well in this recipe. Just use 1/2 cups chopped meat.
Ingredients
Serves 6
- 1 (10-ounce) package frozen spinach, thawed, squeezed dry
- 1 cup chopped cooked chicken
- 1/2 cup chopped cooked sausage
- 3 eggs
- 2 tablespoons grated Parmesan cheese
- 1 (12-ounce) package wonton skins (squares)
- 4 tablespoons butter
- 10 fresh sage leaves
- 1/8 teaspoon freshly grated nutmeg or 1/4 teaspoon ground nutmeg

Combine spinach, chicken, sausage, 2 eggs and Parmesan in a blender or food processor. Process until finely ground. Beat remaining egg with 1 teaspoon water in a small bowl.

Place 1 teaspoon filling on 1 wonton; brush edges with beaten egg. Top with another wonton. Press edges together with a fork to seal. Repeat with remaining wontons and filling.

Grease a large bowl; set aside. Place a batch of pasta in a large pot of boiling water. Cook until transparent, about 2 minutes; remove squares to prepared bowl. Repeat with remaining pasta.

Heat butter in a small saucepan over medium-high heat. Add sage leaves. Cook until fragrant, stirring constantly, about 2 minutes. Pour sauce over pasta. Sprinkle with nutmeg. Stir gently to coat.

If you do not have time to stuff pasta squares, the butter and sage sauce will work equally well on any prepackaged meat- or cheese-filled pasta.
