Banana-Chocolate Cream Pie

none“Instead of buying a prepared graham cracker crust, make crumbs from cookies that are on hand-gingersnaps or vanilla wafers. Combine 1 1/2 cups crumbs, 1/4 cup sugar and 6 tablespoons melted butter.”
Ingredients
Serves 6
- 3/4 cup sugar
- 1/4 cup cornstarch
- 1/4 cup plus 1 tablespoon cocoa powder
- 1/4 teaspoon salt
- 2 cups milk
- 2 egg yolks, beaten
- 1 teaspoon vanilla extract
- 3 bananas, sliced, divided
- 1 prepared (8-inch) graham cracker piecrust
- 1/2 cup whipping cream
Directions

Mix sugar, cornstarch, 1/4 cup cocoa and salt in top of a double boiler. Blend in 1/2 cup milk and yolks; stir until smooth. Stir in remaining milk.

Cook cocoa mixture over boiling water, stirring continually, until thickened, about 5 minutes. Remove from heat. Stir in vanilla. Cool slightly.

Arrange a third of banana slices in piecrust. Spoon half the chocolate mixture over bananas. Repeat layering; cover loosely. Refrigerate for 15 minutes.

Beat cream with an electric mixer set at high speed until soft peaks form, about 5 minutes. Top each serving with whipped cream. Garnish with remaining banana slices and cocoa.
