Coffee Chiffon Pie

10 minutes“Make your own graham cracker crust to save a little money. Combine 1 1/4 cups graham cracker crumbs with 3 tablespoons sugar and 1/3 cup melted butter. Press into a pie pan and proceed with recipe.”
Ingredients
Serves 6
- 1 1/2 cups cold milk
- 1 envelope unflavored gelatin
- 3/4 cup sugar, divided
- 1/8 teaspoon salt
- 4 eggs, separated
- 2 tablespoons instant coffee powder
- 2 tablespoons water
- 1 prepared graham cracker crust
- Whipped cream
Directions

Pour milk into a medium saucepan. Sprinkle gelatin over milk. Let stand for 3 minutes for gelatin to soften. Stir in 1/2 cup sugar, salt and egg yolks. Mix well.

Cook mixture, stirring constantly, over medium heat until thickened. Do not boil. Add instant coffee powder and stir until dissolved. Place mixture in freezer until cold, about 30 minutes.

Bring remaining sugar and water to a boil in a small saucepan. Beat egg whites until foamy. Continue beating, adding the hot syrup in a thin stream. Beat until egg whites are glossy and stiff.

Fold coffee mixture into egg whites and mix gently. Spoon into pie crust. Refrigerate until serving time. Garnish with whipped cream.
