Cranberry-Raisin Pie

45 minutes“Golden raisins have a winey flavor and a pretty, almost translucent appearance. They also are more expensive than dark raisins. Use ordinary raisins if you want to save money without sacrificing flavor.”
Ingredients
Serves 6
- 2 sheets refrigerated pie pastry
- 2 cups fresh cranberries
- 1 1/2 cups golden raisins
- 1/2 cup sugar
- 1/4 cup maple syrup
- 1/2 teaspoon vanilla extract
- Grated zest of 1 orange
- 2 tablespoons butter or margarine, sliced
Directions

Press one sheet of pastry into a 9-inch pie plate. Cut to fit. Chill in freezer. Cut remaining pastry into lattice strips. Arrange on waxed paper. Chill.

Combine cranberries, raisins and sugar in a large bowl. Stir well. Add syrup, vanilla and orange zest. Stir well. Preheat oven to 425°F.

Pour cranberry mixture into pie plate. Arrange butter over filling.

Weave the pastry strips over the filling. Press to seal at edges. Bake on a baking sheet for 15 minutes. Reduce heat to 350°F. Bake until crust is golden brown and juices bubble, about 30 minutes longer.
