Kentucky Pecan-Fudge Pie

If you keep chocolate baking squares in your pantry, use them instead of unsweetened cocoa powder to save a little money. Melt 11/4 squares with the butter in step 1, and increase the flour to 1/3 cup.

Ingredients

Serves 6 

  • 1 stick butter or margarine
  • 1/4 cup unsweetened cocoa powder
  • 2 eggs, beaten
  • 1 cup sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon vanilla extract
  • 1 cup chopped pecans
  • 1 unbaked (9-inch) piecrust
Directions

    Preheat oven to 350°F. Place butter in a small microwave-safe bowl. Microwave on HIGH for 1 minute or until melted. Stir in cocoa; mix well.

    Combine butter mixture, eggs, sugar, flour, vanilla and pecans in a large bowl; mix with a whisk.

    Spoon filling into piecrust.

    Bake until pie is just set in center and still retains its shape when shaken, about 25 minutes. Let cool before slicing.
