Mocha-Frosted Walnut Cake

If the walnuts called for in this recipe are too pricey, you can still have nutty flavor without spending a fortune. Simply omit the walnuts and use 1 tablespoon of hazelnut liqueur or butternut flavoring.

Ingredients

Serves 8 

  • 1 stick butter or margarine, softened
  • 1 1/2 cups sugar
  • 2 eggs
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 3/4 cup milk
  • 1 cup chopped walnuts
  • 1 teaspoon vanilla extract
  • FROSTING:
  • 4 ounces white chocolate chips
  • 2 tablespoons whipping cream
  • 1 stick butter, softened
  • 3 cups confectioners' sugar
  • 2 tablespoons strong brewed coffee
Directions

    Preheat oven to 350°F. Grease and flour a large baking pan. Beat butter and sugar in a large bowl with an electric mixer until fluffy, about 1 minute. Add eggs, one at a time, beating after each addition.

    Combine flour and baking powder in a small bowl. Add to creamed mixture alternately with milk. Stir in walnuts and vanilla.

    Spread batter in prepared pan. Bake until a tester inserted in center comes out clean, about 30 minutes. Let cool.

    For frosting, microwave white chocolate and cream on HIGH for 11/2 minutes; stir. Beat butter and confectioners' sugar in a large bowl until fluffy. Beat in cream mixture and coffee. Frost cake.

It is best to use shiny pans when making a cake because they reflect the heat, thereby producing tender crust. If you're using a glass baking dish instead of a metal pan, reduce the oven heat by 25°F.
