Mocha-Glazed Coffee Cake

35 minutesYou can save money by preparing your own baking mix. For each cup of mix, combine 3/4 cup flour, 11/2 teaspoons baking powder, 1/4 teaspoon salt and 21/2 tablespoons shortening.

- 1/4 cup sugar plus 2 tablespoons sugar
- 4 cups instant baking mix
- 1 cup margarine, softened
- 2 cups sour cream
- 2 cups confectioners' sugar
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon instant coffee granules
- 3 tablespoons hot water
Directions

Preheat oven to 400°F. Grease a fluted tube pan. Sprinkle with 2 tablespoons sugar.

Combine baking mix, 1/4 cup sugar, margarine and sour cream in bowl; mix well. Pour into prepared tube pan.

Bake for 35 minutes or until golden brown. Cool in pan for 5 minutes. Invert onto serving plate.

Mix confectioners' sugar and cocoa in small bowl. Dissolve coffee in hot water. Blend with cocoa mixture. Drizzle over coffee cake.
