Cheesy Potato and Cauliflower Mash

Ingredients
Serves 6
- 6 russet potatoes, peeled, chopped
- 1 small head cauliflower, chopped
- 6 cloves garlic, peeled
- 1 cup whipping cream
- 2 tablespoons butter or margarine
- 2 cups shredded Cheddar cheese, divided
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
Directions

Bring a large pot of water to a boil. Add potatoes, cauliflower and garlic. Cook, covered, over low heat until tender, about 20 minutes.

Drain vegetables. Mash vegetables slightly with a potato masher.

Add cream and butter. Return pot to low heat. Mash vegetable mixture until almost no lumps remain. Remove from heat.

Add Cheddar, reserving 1 tablespoon. Stir until cheese is melted. Add salt and pepper; stir. Top with remaining cheese.

You can save some time by using instant mashed potatoes and incorporating them in step 2. The cauliflower and garlic used in step 1 should cook in about 10 to 12 minutes.
