Grilled Potato Bundles

40 minutesInstead of adding potatoes to your shopping cart every week, buy them in bulk and store in a cool, dark place. If they become soft during storage, soak them in ice water for 2 hours to revive them.
Ingredients
Serves 6
- 6 medium potatoes
- 1 small onion, sliced
- 1 small green bell pepper, chopped
- 3 tablespoons butter or margarine
- 1/2 teaspoon garlic salt
- 1/2 teaspoon paprika
- Salt and pepper

Preheat grill or broiler. Cut six 12-inch squares of heavy-duty foil and spray each one with cooking spray.

Peel potatoes; slice lengthwise into strips. Place one potato on each foil square. Divide onion, bell pepper and butter among squares.

Sprinkle potatoes with garlic salt and paprika. Add salt and pepper. Pull opposite sides of each square to center and fold over tightly. Fold ends toward center to seal.

Grill or broil potatoes for 20 minutes on each side or until tender. Prick foil bundles to allow steam to escape. Carefully fold back sides of foil; serve potatoes in packets or on individual plates.
