Irish Potatoes

15 minutes“Leftover Irish Potatoes, also called colcannon, make a great soup. Mix 1 cup cooked colcannon, 1 cup chicken broth and 1/2 cup milk or cream in a saucepan; stir well. Then just heat soup and serve.”
Ingredients
Serves 6
- 1 cup water
- 2 cups shredded green cabbage
- 4 cups warm mashed potatoes
- 6 green onions, chopped
- 1 tablespoon chopped fresh parsley
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons butter or margarine, sliced
- 1/2 teaspoon paprika
Directions

Preheat oven to 375°F. Bring water to a boil in a medium saucepan; add cabbage. Cover; cook until cabbage is tender, about 5 minutes. Drain well.

Combine cabbage and mashed potatoes in a large bowl; mix well. Add green onions, parsley, salt and pepper; mix well.

Spoon potato mixture into a medium baking dish.

Arrange butter slices evenly over potato mixture. Sprinkle top with paprika. Bake until heated through, about 15 minutes.

If you do not have any leftover mashed potatoes, you can save a lot of time by using frozen mashed potatoes.
