Mashed Potato Loaf

25 minutes“If you want to make this loaf but do not have mashed potatoes on hand, use instant mashed potatoes. You will save money in addition to saving the time required to peel, boil, and mash the potatoes.”
Ingredients
Serves 6
- 1 tablespoon margarine
- 1 small onion, chopped
- 1 tablespoon Worcestershire sauce
- 2 tablespoons ketchup
- 1/2 teaspoon pepper
- 5 cups mashed potatoes
- 1/2 cup fat-free plain yogurt
- 1/4 cup bread crumbs
- 1/2 teaspoon paprika

Preheat oven to 350°F. Line a loaf pan with foil; spray with cooking spray.

Heat margarine in a skillet over medium heat. Add onion; cook, stirring occasionally, until tender, about 5 minutes. Remove skillet from heat. Add Worcestershire sauce, ketchup and pepper; stir.

Combine potatoes, yogurt and bread crumbs in a large bowl; mix well. Add onion mixture to bowl; mix well. Spoon potato mixture into prepared pan; smooth top with a knife or spatula.

Bake potato loaf until golden and heated through, about 25 minutes. Invert onto a serving platter; remove foil. Sprinkle loaf with paprika. Serve immediately.
