Grandma came up with the idea of serving grilled chicken and a fresh tomato sauce on grilled Italian bread after a visit to a local Italian restaurant.

Grandma came up with the idea of serving grilled chicken and a fresh tomato sauce on grilled Italian bread after a visit to a local Italian restaurant.

Ingredients

Serves 4 

  • 4 slices (1-inch thick) ciabatta bread
  • 3 tablespoons olive oil, divided
  • 4 boneless, skinless chicken breast halves (about 5 ounces each)
  • 2 cups chopped tomatoes (about 2 large)
  • 2 cloves garlic, minced
  • 1 tablespoons balsamic vinegar
  • 1/4 teaspoon salt
  • 1 tablespoon chopped fresh basil leaves
  • 2 tablespoons shredded Parmesan cheese
Directions

    Preheat the grill to medium heat. Brush both sides of the bread with 1 tablespoon oil. Grill until toasted, 1 to 2 minutes on each side. Grill the chicken until browned and cooked through, 8 to 10 minutes. Keep warm.

    Combine the tomatoes, garlic, vinegar and salt in a medium bowl.

    Heat the remaining oil in a medium skillet over medium heat. Add the tomato mixture and heat through. Sprinkle with the basil.

    Place 1 chicken breast half on each slice of bread. Divide the tomato mixture evenly among the chicken breast halves. Sprinkle with the Parmesan.

Grandma's Secret Tip

When Grandma had a passel of hungry teenagers to feed, she made this cheesy variation: After placing the chicken on the bread slices, she topped each chicken breast with a slice of mozzarella cheese, then broiled just until the cheese melted. Just before serving, she topped each with the tomato mixture.

Grandma usually served this with just green salad to make a satisfying dinner. Pistachio ice cream was a great way to end the meal.
