Caribbean Chicken

20-30 mins.“Tastes like it’s from a great Caribbean restaurant, but ready in minutes at home. Jerk seasoning and brown sugar make it spicy sweet. ”
Ingredients
- 3 tbsp. olive oil
- 3 cloves garlic, minced
- 2 1/2 teaspoon dried thyme
- 2 1/2 teaspoon dried tarragon
- 2 teaspoon firmly packed light brown sugar
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon jerk or Cajun seasoning
- 1/4 teaspoon cayenne pepper
- 3–3 1/2 pound chicken pieces
Directions

Combine the oil, garlic, thyme, tarragon, brown sugar, salt, black pepper, jerk seasoning and cayenne pepper in a large bowl.

Add the chicken pieces to the bowl. Gently stir to coat the chicken. Place the chicken pieces in a 12-inch skillet.

Cover the skillet and cook over medium heat, turning once, until the chicken is cooked through and the juices run clear when pierced with a knife, 20–30 minutes. Serve.

Grandma's Secret Trick
Jerk seasoning is a dried blend of chiles, thyme, cinnamon, ginger, allspice, cloves, garlic and onions. The brown sugar in this recipe sweetens it and the cayenne pepper adds fire. If you want more fire, you can add another ¼ tsp. cayenne.
