Chicken & Asparagus Spirals

When Grandma had a baby shower for me, she served this wonderful dish. Everyone asked for the recipe.

Ingredients

Serves 5 

  • 2 whole chicken breasts, boned, skinned
  • 4 1/2 tablespoons olive oil, divided
  • 1/4 cup sesame seeds, lightly toasted
  • 30 fresh asparagus spears, trimmed, blanched
  • 2 tablespoons lemon juice
  • 1/4 cup chopped green onions
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Directions
  1. 1

    Cut each chicken breast into five 6x1-inch strips. Dip strips in 3 tablespoons olive oil and roll in sesame seeds.

    Preheat the oven to 350F.

    Wrap each chicken strip spiral-fashion around 3 asparagus spears. Arrange in a single layer in a large shallow baking pan.

    Drizzle chicken spirals with lemon juice and remaining olive oil.

    Sprinkle with onions, salt and black pepper. Bake for 15 to 20 minutes.

Grandma's Secret Trick

Cutting chicken breasts into strips is much easier, Grandma explained, when they are slightly frozen. She placed them on a plate or baking sheet and froze them for 30 minutes. When the meat was firm, it was easier for her to slice, and the slices were neater.
