A steaming bowl of creamy chicken and dumplings is a comforting one-dish meal. All you need is a spoon—and your appetite!

Ingredients

Serves 6 

  • 3 tablespoons vegetable oil, divided
  • 1 cup sliced carrots (about 2 medium)
  • 1 cup chopped onion (about 1 large)
  • 1 cup sliced celery (about 2 stalks)
  • 2 cups chicken broth
  • 1/2 teaspoon salt
  • 1 pound boneless, skinless chicken thighs
  • 1 cup plus 2 tablespoons milk, divided
  • 1/2 cup plus 1/3 cup all-purpose flour, divided
  • 1/3 cup yellow cornmeal
  • 1 teaspoon baking powder
  • 1 large egg, beaten
Directions

    Heat 1 tablespoon oil in a Dutch oven over medium-high heat. Add the carrots, onion and celery. Cook, stirring occasionally, until the vegetables are crisp-tender, 4–6 minutes. Add the broth and salt. Mix well. Add the chicken. Reduce heat to medium-low. Cover and simmer until the chicken is cooked through, 10–12 minutes longer.

    Transfer the chicken to a cutting board. Cut into bite-size pieces. Combine 1/2 cup milk and 1/3 cup flour in a small bowl. Mix well. Stir into the liquid and vegetables in the pot. Cook until bubbly and thickened, 2–4 minutes. Return the chicken to pot.

    Combine the remaining flour, the cornmeal and baking powder in a medium bowl. Stir in the egg, remaining milk and remaining oil until combined. Drop the dough in 6 mounds on top of the simmering chicken mixture. Reduce heat to low. Cover and simmer until a toothpick inserted in the center of a dumpling comes out clean, 10–12 minutes. Serve.
