Grandma invented this dinner-for-two recipe after her children had left home.

Ingredients

Serves 2 

  • 2 boneless, skinless chicken-breast halves (about 5 ounces each)
  • 2 medium potatoes, scrubbed, sliced
  • 1 medium onion, sliced
  • 4 mushroom caps
  • 6 green and/or red bell pepper rings
  • 2 tablespoons instant long-grain rice
  • 1 teaspoon Worcestershire sauce
  • 1/4 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons butter
Directions

    Preheat the oven to 450F. Cut 2 large pieces of foil. Fold foil in half.

    Place a piece of chicken on each piece of foil. Arrange equal portions of potatoes, onion, mushrooms and bell pepper around the chicken. Sprinkle with rice, Worcestershire sauce, paprika, salt and black pepper. Dot with the butter.

    Fold foil to enclose the contents, folding sides under to seal.

    Bake, turning after 30 minutes, until an instant-read thermometer inserted in meat registers 180F, about 1 1/4 hours.
