Ingredients

Serves 10 

  • 4 cups chopped cooked chicken
  • 6 slices white bread, torn into bite-size pieces
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1/3 cup mayonnaise
  • 2 cups milk
  • 1 (10 3/4-ounce) can cream of mushroom soup
  • 4 large eggs, beaten
  • 1/2 cup shredded sharp Cheddar cheese
Directions

    Combine chicken, bread, celery, onion, bell pepper and mayonnaise in a large bowl and mix well.

    Spoon the chicken mixture into a greased 2-quart oval baking dish.

    Combine the milk, soup and eggs in a medium bowl and mix well. Pour over the chicken mixture. Chill, covered, for 3 to 4 hours.

    Preheat the oven to 350F.

    Sprinkle Cheddar on top of strata. Bake, uncovered, for 1 hour.

    Variation: Substitute cooked, crumbled pork sausage for the chicken.

Grandma's Secret Trick

On winter afternoons, Grandma often had a chicken simmering on a back burner so she'd have chicken for this recipe. She placed a 4-pound chicken in a large soup pot and covered it with cold water. Then she added a bay leaf and an onion to the water, brought the water to a boil, lowered the heat and simmered the chicken for 1 hour. She chopped the meat, discarding the skin and bones, then skimmed the broth and saved it for soup.
