Classic Chicken Parmesan

Ingredients

Serves 6 

  • 1/2 cup seasoned bread crumbs
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 cup milk
  • 6 boneless, skinless chicken-breast halves (about 5 ounces each)
  • 1 tablespoon olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 (26-ounce) jar marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
Directions

    Preheat oven to 350°F. Lightly grease a 13 × 9-inch baking dish. Combine bread crumbs, basil and oregano in small bowl. Place milk in shallow bowl or dish. Dip chicken in milk. Dredge chicken in bread crumb mixture.

    Heat olive oil in large skillet over medium-high heat until hot. Add chicken and cook until browned, about 2 to 3 minutes on each side.

    Place chicken in prepared baking dish. Sprinkle chicken with Parmesan. Pour marinara sauce over chicken and top with mozzarella. Bake, covered, until chicken is no longer pink in center and an instant-read thermometer inserted in center of meat registers 180°F, about 45 minutes.

Grandma's Secret Trick

Grandma always used the freshest ingredients. That's why she liked to grate the Parmesan cheese herself. She would let the piece of Parmesan come to room temperature before cutting it into chunks and grating it in her food processor with the metal blade. Grandma grated a large amount of cheese at one time and stored most of it in bags in the freezer. It kept for months this way, allowing her to measure it out as needed.
