Grilled Honey Mustard Chicken

Mixing together this marinade of honey, mustard, lemon juice and ginger is one of my first memories of cooking with Grandma.

Ingredients

Serves 4 

  • 1/2 cup mayonnaise
  • 1/3 cup Dijon-style mustard
  • 1/4 cup honey
  • 2 tablespoons lemon juice
  • 1/2 teaspoon ground ginger
  • 1 whole chicken, cut into pieces (about 3 1/2 pounds)
  • 1 teaspoons salt
  • 1/2 teaspoons black pepper
Directions

    Place the mayonnaise, mustard, honey, lemon juice and ginger in a medium bowl. Whisk until smooth. Transfer half of the marinade to a large measuring cup and set aside. Refrigerate the remaining marinade.

    Place the chicken in a large bowl. Season with the salt and pepper. Pour the reserved marinade over the chicken, turning pieces until coated well. Cover and refrigerate for 1 hour.

    Preheat grill to medium. Grill the chicken, turning frequently, until deep golden brown, cooked through and juices run clear when thickest pieces are pierced with a knife, 25 to 35 minutes. Brush the remaining marinade over the chicken and grill for 1 to 2 minutes longer.

Grandma learned the hard way that you shouldn't cook the chicken at a higher temperature than stated in the recipe—the sugars in the honey burned long before the chicken was cooked through.
