Nana's Chicken a la King

Ingredients
Serves 4
- 4 green onions (about 1/2 cup sliced)
- 8 mushrooms (about 1/2 cup sliced)
- 1 clove garlic
- 1 tablespoon olive oil
- 3 boneless, skinless chicken breasts, diced
- 1 (10 3/4-ounce) can condensed cream of celery soup
- 2 tablespoons milk
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 2 English muffins, halved

Preheat the oven to 450°F.

Slice green onions and mushrooms; set aside. Mince garlic; set aside.

Heat 1 tablespoon olive oil in large nonstick skillet over medium-high heat until hot. Add chicken; cook until chicken is no longer pink in center, about 5 to 7 minutes.

Combine chicken, soup, green onions, mushrooms, milk, garlic, salt and pepper in medium bowl; mix thoroughly. Spray 4 (6-ounce) custard cups with nonstick cooking spray; place equal portions of chicken mixture in each cup.

Top chicken mixture with English muffin halves, split sides down. Place custard cups on baking sheet.

Bake until muffins are golden brown and chicken mixture is hot and bubbly, about 13 to 15 minutes. Invert custard cups onto serving dishes. Serve immediately.

This was always a great weeknight dinner at Nana's house, because it was quick and easy to make. To save even more time, Nana would prepare this dish with leftover chicken or turkey; no one could tell the difference.
