Nutty Chicken Drumsticks

Ingredients
Serves 4
- 1 large egg
- 12 chicken drumsticks or 6 legs (about 3 pounds)
- 1 cup cornflake crumbs
- 1/3 cup finely chopped pecans
- 1 tablespoon granulated sugar
- 1 1/2 teaspoons salt
- 1/2 teaspoon onion powder
- 1/2 teaspoon black pepper
- 4 tablespoons butter, melted
Directions

Preheat oven to 400°F. Lightly beat egg in large bowl. Add chicken and toss with egg until evenly coated.

Combine cornflake crumbs, chopped pecans, sugar, salt, onion powder and black pepper in large resealable plastic food storage bag. Add two chicken legs; seal bag. Shake bag gently until chicken is evenly coated. Repeat with remaining chicken legs.

Line a large baking sheet with aluminum foil. Place chicken on prepared baking sheet; drizzle chicken with melted butter. Bake until chicken is tender, about 40 to 45 minutes.

Grandma's Secret Trick
Every August at their summer lake cottage, Grandpa liked to go fishing. Most afternoons he would bring Grandma his daily catch of fresh lake perch or whitefish to cook up for dinner. Grandma soon became skilled in fish cookery. One of Grandpa's favorite dishes was when she used her nutty chicken coating on fish fillets. Grandma added a pinch or two of dried dill to the coating and substituted lemon pepper for plain black pepper. The fish came out of the oven brown and crispy-just the way Grandpa liked it.
