Salsa is a great shortcut for adding lots of taste and tenderness to simple baked chicken. Spice up dinner tonight!

Salsa is a great shortcut for adding lots of taste and tenderness to simple baked chicken. Spice up dinner tonight!

Ingredients

Serves 4 

  • 3 1/2 pounds bone-in chicken pieces
  • 1 package (1 1/4 ounce) taco seasoning
  • 1 jar ( 16 ounces) salsa
  • 1/2 cup chicken broth
  • 1 tablespoon chopped fresh cilantro
  • 1/4 teaspoon black pepper
Directions

    Preheat oven to 375°F. Lightly spray a 13- x 9-inch baking dish with nonstick cooking spray.

    Combine the chicken and taco seasoning in a large bowl. Toss to coat.

    Add the salsa, broth, cilantro and pepper to the chicken in the bowl. Mix well.

    Place the chicken in the prepared baking dish. Pour the remaining salsa mixture in the bowl over the chicken. Bake until the chicken is cooked through and the juices run clear when pierced with a knife, 30–40 minutes. Serve.
