Serves 4

  • 1 chicken (about 3 pounds) cut into pieces
  • 1/2 teaspoon salt
  • 1 tablespoon vegetable oil
  • 4 cloves garlic, minced
  • 1 bay leaf
  • 1 1/2 teaspoon crushed black peppercorns
  • 1/4 teaspoon dried thyme
  • 4 canned tomatoes
  • 20 piemento-stuffed olives
  • 1 1/4 cups dry white wine or chicken broth
  • 1 1/4 cups chicken broth
Directions
  1. 1

Sprinkle the chicken with salt. Heat the vegetable oil in a large skillet over medium heat. Add the chicken. Cook, turning, until the chicken is browned, about 10 minutes

  2. 2

Add the garlic, bay leaf, peppercorns and thyme to the skillet; mix well. Spoon the undrained tomatoes into the skillet.

  3. 3

Add the olives, white wine and chicken broth. Stir mixture gently to combine.

For a subtle change in flavor, use plain black or green olives in place of the pimiento-stuffed olives in Step 2
