Spanish Olive Chicken

Ingredients
Serves 4
- 1 chicken (about 3 pounds) cut into pieces
- 1/2 teaspoon salt
- 1 tablespoon vegetable oil
- 4 cloves garlic, minced
- 1 bay leaf
- 1 1/2 teaspoon crushed black peppercorns
- 1/4 teaspoon dried thyme
- 4 canned tomatoes
- 20 piemento-stuffed olives
- 1 1/4 cups dry white wine or chicken broth
- 1 1/4 cups chicken broth
Directions

Sprinkle the chicken with salt. Heat the vegetable oil in a large skillet over medium heat. Add the chicken. Cook, turning, until the chicken is browned, about 10 minutes

Add the garlic, bay leaf, peppercorns and thyme to the skillet; mix well. Spoon the undrained tomatoes into the skillet.

Add the olives, white wine and chicken broth. Stir mixture gently to combine.

Reduce heat to low. Simmer, uncovered, until the chicken is tender and cooked through, about 40 minutes. Discard the bay leaf. Serve hot.
