Swiss Chicken Casserole

Ingredients

  • 1 (14-ounce) can artichoke hearts
  • 4 cups chopped cooked chicken
  • 12 ounces Swiss cheese, shredded
  • 2 cups chopped celery
  • 2 cups herb-seasoned croutons
  • 1 (10 3/4-ounce) can cream of celery soup
  • 1/2 cup mayonnaise
  • 1/2 cup milk
  • 1/4 cup chopped onion
  • 1/4 teaspoon salt

Directions

    Preheat the oven to 350°F. Spray an 113/4 × 71/2-inch baking dish lightly with nonstick cooking spray.

    Drain and chop the artichoke hearts. Combine chicken, artichoke hearts and Swiss in a large bowl and mix well.

    Combine celery, croutons, soup, mayonnaise, milk, onion and salt in a medium bowl and mix well.

    Add soup mixture to chicken mixture and mix well. Spoon into prepared baking dish.

    Bake until browned and bubbly, about 30 to 40 minutes.

Grandma's Secret Trick

Canned artichoke hearts are handy to have on hand. Always looking for good buys, Grandma sometimes bought them by the case. In addition to using them in this recipe, she used them in a dip she called "bread bath." She mixed a drained can of artichoke hearts with 2 garlic cloves, 1 / 2 cup olive oil, 1 anchovy fillet, 1 / 2 cup heavy cream, salt and pepper in a saucepan. She simmered this mixture over low heat for 5 minutes, then pureed it in the blender. She served the warm dip with bread for dunking. It was so filling, you could make a meal from it.
