Ingredients

Serves 4 

  • 1 teaspoon ground cumin
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 4 turkey tenderloin steaks (about 4 ounces each)
  • 1 cup chopped tomato (about 1 medium)
  • 1 cup chopped yellow bell pepper (about 1 medium)
  • 1 cup chopped green bell pepper (about 1 medium)
  • 1 can (4 ounces) chopped green chiles, drained
  • 1/4 cup sliced green onions (about 2)
Directions

    Combine the cumin, saltand black pepper in a small bowl. Mix well. Place the turkey steaks on a plate and sprinkle both sides with the cumin mixture.

    Spray a large skillet with nonstick cooking spray. Place the turkey in the skillet and cook over medium heat, turning occasionally, until cooked through, 10–12 minutes. Transfer the turkey to a warm platter. Cover with foil and set aside. Reserve the drippings inthe skillet.

    Add the tomato, bell peppers, chiles and onions to the skillet. Cook, stirring constantly, for 1–2 minutes. Serve the vegetables with the turkey.
