Grandma recreated the nostalgic aromas of Thanksgiving throughout the year with this savory turkey casserole.

Ingredients

Serves 4 

  • 3 tablespoons olive oil
  • 10 slices white bread, cubed
  • 4 tablespoons (1/2 stick) butter, divided
  • 1 small onion, chopped
  • 2 ribs celery, chopped
  • 3 cups turkey broth, divided
  • 3 tablespoons chopped sage
  • 1/4 cup dried cranberries
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons all-purpose flour
  • 1 pound deli turkey, 1/4-inch slices 2 cups frozen peas
  • 1 (14-ounce) can cranberry sauce (optional)
Directions

    Preheat oven to 350°F. Spray a springform pan with nonstick cooking spray. Pour the oil on a baking sheet. Toss the bread cubes in the oil to coat. Bake until dried and golden brown, about 15 minutes. Cool.

    Heat 2 tablespoons of butter in a large skillet over medium heat. Sauté the onion and celery for 5 minutes, or until transparent. Add the bread cubes to the pan with one cup broth, sage, cranberries, salt and pepper; stir. Cook 3 minutes, or until bread cubes are moist. Transfer about 3/4 of the stuffing into the prepared pan, pressing to make a crust.

    For the gravy, heat the remaining butter in a medium saucepan, add flour and cook for 1 minute. Add the remaining broth and whisk until thick.

    Top the stuffing with the turkey and the peas. Place the remaining stuffing over the peas and pour 1 cup of the gravy on top. Bake for 45 minutes, or until heated through.

    Serve with remaining gravy and cranberry sauce, if desired.

Use Thanksgiving leftovers to make this casserole. Use the leftover stuffing to make the crust, then add the turkey, any vegetable & even mashed potatoes or yams. Top with more stuffing & serve with gravy.

Make individual portions. Press the stuffing into a muffin tin, add cooked turkey, peas & a little more stuffing. Top with gravy & bake 30 minutes, 350˚F.
