Packed with tasty chicken and bursting with beans, this hearty dish has a gentle kick that will spice up dinnertime.

Ingredients

Serves 4 

  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 2 teaspoons minced garlic
  • 3 cups chopped cooked chicken
  • 1 tablespoon ground cumin
  • 1 teaspoon chili powder
  • 1/4 teaspoon dried oregano
  • 1 can (14 1/2 ounces) diced tomatoes with green chiles
  • 1 can (15 ounces) Great Northern beans
Directions

    Heat the oil in a large skillet over medium-high heat. Add the onion and garlic and sauté, stirring occasionally, until softened, 4–5 minutes.

    Add the chicken, cumin, chili powder and oregano to the skillet; mix well. Add 1 cup water and bring to a boil. Simmer, stirring constantly, for 3 minutes.

    Add the tomatoes and beans to the skillet; mix well. Cook, stirring occasionally, for 5 minutes. Serve immediately.
