A taste of Tuscany…a simple blend of bell pepper, onion, chicken and artichokes is sauteed in a sweet honey glaze.

A taste of Tuscany…a simple blend of bell pepper, onion, chicken and artichokes is sauteed in a sweet honey glaze.

Ingredients

Serves 4 

  • 1 medium red bell pepper
  • 1 medium onion, chopped
  • 4 boneless, skinless chicken breast halves (5 oz. each), cut into 1-inch cubes
  • 1 can (15 oz.) quartered artichoke hearts, drained
  • 1/2 cup honey
  • 1/4 cup red-wine vinegar
  • 1/2 tsp. dried thyme
Directions

    Deseed the bell pepper and cut into 1/4-inch slices. Cook the bell pepper slices and onion in a 12-inch skillet over medium heat, stirring occasionally, until the onion is softened, 3–5 minutes.

    Add the chicken to the skillet. Cook, stirring occasionally, for 3–5 minutes.

    Add the artichoke hearts, honey, vinegar and thymeto the skillet. Cook, stirring occasionally, until the chicken is cooked through and the sauce thickens,15–20 minutes. Serve.
