Ingredients

Serves 4 

  • 1 tbsp. olive oil
  • 4 boneless, skinless chicken breast halves (about 5 oz. each)
  • 1 tsp. dried thyme
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1/4 cup Dijon-style mustard
  • 1 cup whipping cream
Directions

    Heat the oil in a 10-inch skillet over medium heat. Add the chicken. Sprinkle each chicken breast with the thyme, salt and pepper. Cook until the chicken is cooked through and the juices run clear when pierced with a knife, 5–6 minutes on each side.

    Remove the chicken from the skillet. Keep warm.

    Add the mustard to the juices in the skillet. Stir until blended. Add the cream and bring to a boil, stirring occasionally. Cook until the sauce has thickened slightly, 3–5 minutes. Spoon the sauce over the chicken and serve.
