A margarita marinade—perfect for summertime. Dance on down to the beach and fire up thegrill for a party.

A margarita marinade—perfect for summertime. Dance on down to the beach and fire up thegrill for a party.

Ingredients

Serves 4 

  • 1/2 cup margarita mix
  • 2 tbsp. lime juice
  • 1 tbsp. orange juice
  • 1 tsp. minced garlic
  • 4 boneless, skinless chicken breast halves (about 5 oz. each)
  • 1 tsp. coarse salt
Directions

    Combine the margarita mix, lime juice, orange juice and garlic in a large resealable plastic bag.

    Add the chicken to the bag. Seal and marinate in the refrigerator, turning the bag occasionally, for 1–4 hours. Remove the chicken from the bag, reserving the marinade. Brush the chicken with the marinade.

    Sprinkle the salt evenly over both sides of the chicken. Preheat grill to medium heat. Place the chicken on the grill. Cover and grill, turning the chicken halfway through grilling and brushing occasionally with the marinade, until cooked through and the juicesrun clear when piercedwith a knife, about20 minutes. Serve.

• Fresh lime juice is best in this recipe. Why not buy a few extra limes and make limeade? Just mix the juice from 3 limes, 2/3 cup sugar and about2 quarts of water in a tall pitcher. Chill and enjoy!
