Pistachio-crusted Chicken

Chopped pistachios and orange zest combine for a crunchy breading with a hint of citrus to accent this tender, juicy chicken.

Ingredients

Serves 4 

  • 4 boneless, skinless chicken breast halves (about 5 oz. each)
  • 1/8 tsp. salt
  • 1 cup pistachios
  • 1 tbsp. bread crumbs
  • 2 tsp. grated orange zest
  • 3 tbsp. all-purpose flour
  • 2 egg whites, lightly beaten
  • 1 tbsp. butter
  • 1 tbsp. canola oil
Directions

    Place the chicken breast halves between 2 pieces of plastic wrap. Pound each chicken breast half to a1/4-inch thickness using the flat side of a meat mallet. Sprinkle with the salt. Set aside.

    Place the pistachios and bread crumbs in a blender or food processor container. Cover and process until the pistachios are just finely chopped. Transfer to a shallow dish. Stir in the zest.

    Place the flour in a shallow dish. Place the egg whites in a separate shallow dish. Dip the chicken in the flour, then the egg whites and finally in the pistachio mixture.

    Heat the butter and oil ina 12-inch heavy skilletover medium heat. Addthe chicken and cook, in batches if necessary, until the chicken is no longer pink, 2–4 minutes on each side. Serve.
