Spicy Beef Satays

Red chile paste lights a fire in the traditional peanut sauce for this simple version of an Indonesian favorite.

Ingredients

Serves 4 

  • 1 lb. beef tenderloin, cut into 1/4-inch-thick slices
  • 11/2 cups purchased beef, teriyaki or mesquite marinade
  • 1 tbsp. vegetable oil
  • 1/3 cup peanut butter
  • 3 tbsp. rice vinegar
  • 1 tbsp. sesame oil
  • 2 tsp. soy sauce
  • 1 tsp. roasted red chile paste
Directions

    Place the beef in a shallow dish. Pour the marinade over the beef. Cover and refrigerate for about 30 minutes.

    Divide the beef evenly among 8 skewers, inserting the skewers through the beef lengthwise. Discardthe marinade.

    Brush a griddle with the vegetable oil and heat over medium heat. Place the skewers on the griddle. Cook until browned andto medium doneness,2–3 minutes on each side.

    Combine the peanut butter, vinegar, sesame oil, soy sauce and chile paste ina small bowl. Mix well.Serve the sauce with the beef satays.

For a light lunch, serve with a green salad tossed with vinaigrette. For a heartier entrée, add a rice pilaf.
