Honeyed Apple Salad

Save yourself the expense of the half-and-half by substituting 1/4 cup sour cream and 1/4 cup milk instead. Reduce the lemon juice to 1 tablespoon since the sour cream provides sufficient tang.

Ingredients

Serves 6 

  • 3/4 cup half-and-half
  • 3 tablespoons lemon juice
  • 1 tablespoon honey
  • 1 teaspoon cinnamon, divided
  • 4 tart apples, cut into chunks
Directions
  1. 1

    Combine half-and-half, lemon juice, honey and 1/2 teaspoon cinnamon in a medium bowl. Beat with a fork until smooth.

    Add apples to bowl. Stir gently to coat with dressing.

    Sprinkle with remaining cinnamon just before serving.

To keep the apples from turning brown, place them in a bowl with 1 quart ice water and 2 tablespoons freshly squeezed lemon juice. Let stand until ready to use, then drain.
